I made these cakes for my Granddad’s 7th birthday of being sober! I make him a cake every year to show him how proud of him I am.

The lemon yogurt cake was a huge hit so here is the recipe for you! I adapted the recipe from one I found in “The Golden Book of Baking.”

Lemon Yogurt Cake

2 cups all-purpose flour

2 tsp baking powder

1/4 tsp salt

1/4 cup butter, softened

1 cup sugar

zest of 1 lemon

3 large eggs, separated

1 cup lemon flavoured yogurt.

Preheat oven to 325*F. Spray a 9-inch cake pan with non-stick spray then line with parchment paper and then spray the parchment paper.

Whisk the flour, baking powder, and salt in a medium bowl and set aside.

Beat the butter, sugar, and lemon zest in a stand mixer on medium speed until pale and creamy. Add the egg yolks, one at a time, beating until just blended after each addition.

On low speed, beat in the flour mixture a little at a time, alternating with the yogurt and then set the batter aside.

In a separate bowl beat the egg whites at high speed until stiff peaks form. Use a rubber spatula to fold the egg whites into the batter. Spoon the batter into the prepared cake pan.

Bake for 35-45 minutes or until a toothpick inserted into the center comes out clean. Cool the cake in the cake pan for 5 minutes before transferring it to a cooling rack and removing the parchment paper. Once the cake has cooled completely then you can ice it!
